The Chef’s Garden of Herbs at Herrington on the Bay

At Herrington on the Bay, we are inspired by our chef’s motto and pay extra attention to detail during menu preparation so that our guests enjoy the most delicious, freshest cuisine available. We source our ingredients from local farms and use select herbs from our own herb garden located just outside of our kitchen doors.

Our garden includes mint, lavender, oregano, thyme, parsley, basil, cilantro, rosemary, and sage. Executive Chef Mike has shared a few of his favorite recipes which include some of our home-grown herbs.

Lavender Sorbet ~ a refreshing intermezzo for a summer wedding menu

1 cup sugar
1 cup water
3 tbsp. lavender
2.5 tbsp. lemon juice
2 tbsp. vodka

In a medium saucepan over medium heat, combine sugar and water until the sugar dissolves. Add the lavender flowers, stir until mixture comes to a boil. Reduce heat to low and simmer 5 minutes. Remove from heat, cover, and let stand approximately 10 minutes.

Place a fine strainer over a large bowl and pour syrup mixture through (straining out lavender flowers). Add lemon juice and vodka to the strained syrup mixture, stir until thoroughly blended. The vodka is the secret to a soft sorbet. Alcohol itself doesn’t freeze and adding a bit of it keeps the sorbet from doing the same.

Ice Cream Maker: Transfer mixture to ice cream maker, process according to manufacturer’s instructions.
Freezer Method: Pour into container, cover, and place mixture in the freezer. When it is semi-solid, mash it with a fork and refreeze again. When frozen, place in a food processor or blender and process until smooth. Cover and refreeze until serving time.

Can be prepared 3 days in advance. Cover and keep frozen.

Mashed Sweet Potatoes

6 lbs. sweet potatoes peeled and cubed
½ cup milk
2 tbsp. salt
2 tbsp. ground cinnamon
5 tsp. sugar
½ tsp. ground nutmeg
½ tsp. ground allspice
2 sprigs of fresh rosemary

Boil cubed potatoes until tender in salted water.
Drain and put in mixer with warmed milk, butter, and seasonings.
With a mixer, mix with the paddle attachment until combined.
Replace paddle with whip attachment and whip for 1 minute.
Put mashed potatoes in serving container, garnish with rosemary sprig and serve immediately.
